For this particular gourmet dinner, appetizers mainly serve as snacks. A gourmet dinner is complete when it has an appetizer, soup, salad, entrées, and dessert (Reid " Sandres, n.d). In this occasion, the best appetizers would be light food since it is just dinner and guest won’t need massive food. My appetizer choice consists of Walnut, Date, and Blue Cheese Ball served with crackers, bread, or veggies. It is a retro-chic snack prepared two days before the occasion by rolling in minced fresh flat-leaf parsley (Chang, 2017). As for soup recipe, I prefer chicken tortellini soup and the beef barley soup. Having a variety allows individuals to settle on their preferences. Only two types of salad are enough for 300 guests; the first being chicken, avocado, and mango salad, and the second being, kale and feta salad. For the entrees recipe, I settle for Imperial sweet and sour fish, chili braised beef noodles, and eggplant on braised chickpeas. I prefer a simple dessert, the almond rhubarb coffee cake. To wind up, those who don’t like cupcakes can opt for chippy peanut butter cookies.
For this particular gourmet dinner, the raw materials required and their quantities are 2 kilograms of Dates, 1.5 kg of cheese and crackers, 4 loaves of bread, 7 kg of chicken and beef each, 4 kg of fish, 5 eggs, 20 avocados, 15 mangoes, 3 kilograms of veggies such as kales, garlic, tomatoes, onions, cucumber, scallions, olives, feta, mint, and parsley. Also, it needs 1 liter of whisk oil, 1 liter of lemon juice, 50 g of salt and pepper, and chili. Besides, it will require 1 kg of sugar, vanilla, and 50 g baking soda, 2 liters of milk, 100 g of butter, and 250 g of almonds. According to Chang (2017), ingredients for the appetizer can be delivered two days to the actual day of the event, especially in the morning. The rest ingredients of other parts of the menu must be provided at 7.00 A.M on the day of the game. The staff should start preparing the rest of the list that morning.
